This Bacon and Radish Chicken Noodle Soup Recipe is perfect for the cold season and a great new twist to this classic. Bacon and Radish Chicken Noodle Soup Recipe

Ingredients
  • 4 Cups Vegetable Broth (one container of the boxed organic kind)
  • 2 Cups Water
  • 4 Tomatoes (came down from the cabin for us since we didn’t get a garden in this year)
  • 2-3 Cloves Minced Garlic
  • 1 Celery Stalk
  • 2 Carrots
  • 1/2 Yellow Onion
  • 4-6 Red Radishes
  • 1/2-1 Package Pasta (take a look at Trader Joe’s, they have some great noodles for soups, I like a lot of noodles, but then it’s stew-like)
  • 1 Chicken Breast (2 tablespoons vegetable oil, 1 tablespoon soy sauce)
  • 5 Slices Bacon
Instructions
  1. Chop chicken and bacon into bite-sized pieces
  2. Heat oil in small frying pan on medium, add chicken
  3. Add soy sauce to pan when you flip halfway through (3-4 minutes)
  4. Cook bacon in large pan until crispy
  5. Chop vegetables finely
  6. Add liquids and vegetables into dutch oven or slow cooker
  7. Add uncooked pasta
  8. Simmer for at least 3 hours
