I am a snack-aholic. I try to make my own whenever possible – I just hate all the packaging and processing. Well, that, and I do make the best snacks. Chex Mix is by far my favorite. It’s easy to make it just the way you like it. And, I like it Tex Mex style the best. Bold and spicy, and always, always with peanuts.

For something a little different, I wanted to make a sweet version. I make some pretty darn good Puppy Chow, but I wanted something – well, lighter, if you will. I had to make a mix using cinnamon and I just couldn’t deny my daughters’ pleas for chocolate. So, the Mexican Hot Cocoa Chex Mix was destiny.

Mexican Hot Cocoa Chex Mix Recipe

Ingredients
  • 10 Cups Rice or Corn Chex Cereal
  • 2 Cups Pretzels
  • 3 Cups Honey Nut Cheerios
  • 1 Cup Dry Roasted Peanuts
  • 1-2 Cups Candy Corn
  • 1 Tablespoon Honey
  • 1 Stick Butter
  • 1 Tablespoon Cinnamon
  • 2 Tablespoons Cocoa Powder (Unsweetened)
  • 2 Tablespoons Powdered Sugar
Instructions
  1. Preheat oven to 250 degrees
  2. Mix together cereal, pretzels and peanuts in large bowl
  3. Melt butter and honey in microwave
  4. Stir in cinnamon, cocoa powder and sugar to melted butter and honey
  5. Pour over cereal mixture, stirring gently
  6. On 2 aluminum foiled cookie sheets bake for 1 hour, switching racks and stirring every 20 minutes
  7. Let cool and add candy corn

 

Tex Mex Chex Mix Recipe

Ingredients
  • 10 Cups Rice or Corn Chex
  • 2 Cups Pretzels
  • 1 Cup Cheddar Crackers
  • 1 Cup Bagel Chips
  • 1 Cup Dry Roasted Peanuts
  • 1 Cup Whatever’s On Hand (Pita Chips, Cracker Sticks, Shoestring Potato Chips, Corn Nuts)
  • 1 Stick Butter
  • 3 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Hot Sauce
  • 1 Tablespoon Smoked Paprika
  • 1/2 Teaspoon Black Pepper
  • 1 Teaspoon Seasoning (Italian, Old Bay, Garlic Powder)
  • 1/2 Teaspoon Salt
Instructions
  1. Preheat oven to 250 degrees
  2. Mix together cereal and crackers
  3. Melt butter, worcestershire sauce and hot sauce in microwave
  4. Mix in spices and seasonings, leaving out the salt
  5. On 2 aluminum sheets distribute the mix
  6. Sprinkle with salt
  7. Bake for 1 hour, stirring and switching racks every 20 minutes
